A question about a recipe: Watermelon Pudding (Gelo d'Anguria)

I have a question about the recipe "Watermelon Pudding (Gelo d'Anguria)" from Emiko. Can I make this recipe a day before I plan to serve it? I'm concerned it might get too thick.

This is fine to make a day before, it shouldn't change the consistency at all, as long as you keep it refrigerated (It should be served chilled).
