I would see if I could lift the rack and set the turkey aside and pour off the wine and vinegar. You may need a little extra stock to make a gravy from the pan drippings at the end.

Can you elaborate a little? How much white wine and vinegar? Has it already been in the oven? What kind of roasting pan? Is the turkey on a rack in the pan?

12 ounces of apple cider vinegar and a whole bottle of white wine. It has been cooking for a little under 2 hours. It's a kitchen aid roasting pan (cast iron) and yes it is on a rack.
