Need to thaw 21 lb turkey in only 3 days
I am planning to dry-brine then spatchcock my turkey, but didn't realize I could thaw before I dry-brine it. I was planning to combine those two and pull it out tonight in order to have it thawed by Saturday's Friendsgiving. After re-reading the thawing literature this morning, I realize this big girl will need at least 4 days to thaw. Any suggestions on how to safely speed up the thawing at the end, without sacrificing the dry brine? I intend to go home over my lunch break and pull it out ASAP...
