I think it would (based on general opinion, not experience with this recipe) because the sugars in the sweet potatoes might offer some caramelization action while baking. Not sure though! If maybe test them out before if you're making them for a party?
The starches will probably behave a little differently, so they might not crisp in quite the same way, but I'm sure you'd get something delicious. If you try it, let us know how it goes!
