can you braise short ribs in oven for too long or is the longer you keep em in the better?

if i have them in at 225 but want to keep them in the oven for longer than recipe calls for (3 hrs) will that be bad for the meat?

yes you can overcook them and they get dried out and tough.but if it's just a little overcooked, that should be o.k.
