Most of the peel vinegar recipes are for cleaning. I think it is due to the pith.
Me too, I thought it was for eating. This was all I found. Have made flavored vinegars before....look up a recipe for a light fruit or veg steeped vinegar and apply the volumes and timing to orange peels. Good luck.
