I don’t have a cast iron pan- would it be ok to use a glass baking dish or round cake pan?

Yes, ok to use any oven proof gratin dish. Ceramic, metal, glass.
Usually, glass casseroles cook hotter and faster than others, so lower oven temp by 25 degrees Fahrenheit and check doneness starting about 3/4 through the baking time.
