Other versions of the much loved, much repeated recipe for souffle his mother used to make calls for a 6 cup baking dish.

Not sure of the exact volume of the Staub pan mentioned in the recipe, but your instincts are right - it is probably larger.

So I would use any baking dish you have that is about 6 cups volume.
