Should I try this recipe with grapefruit beer?

I used this recipe two years ago with a pale ale and we loved it. I'm tempted to try it with grapefruit beer. I can imagine the flavors, but also nervous at the same time. Vinegar, grapefruit, meat, and mint? What do you think? Would it alter it too much and ruin some good bones? Thank you for your thoughts!

It's a judgement call.
With only half cup of beer, I don't think it could ruin the dish.
But on flavor balance - mint and grapefruit go well together, but I might replace the rice vinegar this time with a citrus juice (orange or lemon) as the acid.
