Roasted chickpeas too hard—how to fix?

I soak dried garbanzo beans/chickpeas overnight, rinse well, then cook beans in Instant Pot. Beans come out tender. Then I dry beans on towel, toss with olive oil, roast at 375 degrees on jelly roll pan for 60 minutes, stirring every 15 minutes. Beans get nicely golden brown. Roasted beans are hard & crunchy like corn nuts. Tried roasting 45 minutes and centers were soft. How to cook the beans so end result is lightly crunchy like the commercially sold chickpeas? Don’t want to crack my teeth!

I remember going into this problem a few years ago - I had some good recipes for roasted chickpeas as snacks, but no way could I match the texture of the commercial ones.
Looked into it and found that the commercial producers had machines and processes available to them (and not to us consumers) that produce that crunch.
