Based on this recipe from The Kitchn, 8 1/2 oz. rhubarb is about 2 cups or 3 long stalks: http://www.thekitchn.com/thekitchn/dessert/spring-dessert-recipe-roasted-rhubarb-clafouti-145378

Even without pectin, it should thicken up nicely to a jammy consistency.
