I'm making borscht using small beets. The recipe says PEEL them. Isn't that pointless? I thought the peel gave the soup it's bright color, anyway. I'm planning on scrubbing the hell out of them, but peeling seems insane.

Totally agree -- it's not necessary unless the skin is thick and tough.
