I bake with olive oil all the time! Many Greek cakes and cookies are made with olive oil, so that makes it easy. I've also taken recipes that call for melted butter and subbed all or half olive oil. The sexiest thing I've ever made with olive oil, however? Molten chocolate and olive oil cakes!
