I have baked cauliflower in heavy cream, seasoned with salt and pepper topped with a sprinkling of parmesan. Delicious!

After carmelizing onions and mushrooms, I like to deglaze with a little chicken broth, add just a little heavy cream, and about a tsp of dijon mustard... It is a toolicious sauce for many things....

My favorite things to do with cream both also involve strawberries. The first is softly whipped atop strawberry shortcake (made with biscuits, of course); and the second is whipped with really good raspberry jam and served alongside a basket of gorgeous strawberries as a dipper.

Heavy cream actually freezes well (lighter creams, half-and-half don't).

You can use an ice tube tray or silicone molds to freeze individual portions to meter out the frozen cream. Or just stick the carton in the freezer. Not a big deal.
