Well over fifty of the recipes featured as a Genius Recipe (nearly a quarter) are 100% plant-based—maybe because of their ingenuity in the face of strict limitations (see: "butter" and "cream" that are less perfect substitutes and more just smart and good-tasting in their own right), or simply because fewer ingredients mean less of a chance one will be ham. Five of the past ten recipes I've written about alone have been vegan. (Am I vegan? No?)
So I decided to start small, and obvious: The eight desserts below lack cream, butter, and other dairy, thanks to crafty work with fruit, dark chocolate (yes, typically dairy-free, but do check the ingredients), and sometimes even tofu. Bet you can't guess where I hid the tofu.
