These recipes stipulate exact measures of individual spices, but here's how to DIY your own all-purpose mix: combine 3 tablespoons of cinnamon, 2 teaspoons of ginger and nutmeg, and 1 teaspoon of allspice and cloves (and of course, feel free to play around with the ratios).
