You have to love pumpkin spice. It's not your fault. You are potentially genetically programmed to. When the turtlenecks come out or various twee gourds begin appearing in your market or you hear even one person mention their Halloween costume, the craving begins.

And there's nothing wrong with that! Beneath the moniker and the latte that started it all, pumpkin spice is really just a mutable mixture of nutmeg, cinnamon, allspice, and ginger, sometimes with clove or anise along for the ride. It is the scent and taste of all things cozy, warm, and safe. It is, essentially, fall in a spice bottle.

Now that we've all agreed that pumpkin spice is inevitable as soon as October hits and that you can—nay, should—embrace it, it's time to make these 18 recipes.

Side note: We don't recommend using the pre-mixed stuff. These recipes stipulate exact measures of individual spices, but here's how to DIY your own all-purpose mix: combine 3 tablespoons of cinnamon, 2 teaspoons of ginger and nutmeg, and 1 teaspoon of allspice and cloves (and of course, feel free to play around with the ratios).
