Lovely recipe, redundant use of the word eponymous. The olives are named after a town, they are not named after an eponymous town. The town is not named after itself.

I used buckwheat instead of rye- that's what I had, my 35 year old starter, two kinds of olives and this turned out fantastic- and I did measure in grams- most scales have both.

YIKES! "No one in America measures in grams" ... just false. I am an American born and still live here and have measured in grams for years. I commented more fully on the recipe which is where your comment landed ... perhaps you forgot that you clicked over to the recipe and commented there. I like to have olive bread with very thin slices of mortadella or, any salumi, really.
There's a SF bakery called Jane The Bakery, which sells a polenta olive loaf (very similar to this one) that is so delicious. I love to grab a loaf whenever I am in that area and enjoy it in the morning as the base of an avocado toast :)

I've been to Jane several times, it's such a great bakery! Sadly, I've not had their olive loaf, but their pastry was amazing. I don't live out in SF, but I try to go there every time I visit.
