Oh, gosh, never meant to start a sniping bout. My dad owned a bakery for years and the only Pullman pans he ever had were very long and thin with extremely straight edges and lids. So that’s what I expected to see in the pic. The Pullman pan shown (and yes, I have now researched and seen there are smaller wider versions) looked to me like a standard bread pan, especially since there wasn’t a lid. My apologies to everyone for seeming to be so ignorant.

Ahh, no worries, Donna! What you're describing is the proper Pullman used in bakeries (and even back in the day on railway cars), these from USA Pan are adapted and made for the home baker. No harm no foul 🙂 Happy baking!

You are not alone, Donna. I was expecting to see a picture of the traditional Pullman pan. I got mine from a friend and finally (after 10 years of ownership) tried it with a milk bread recipe. So good!
I have since bought a smaller Pullman pan that looks more like the one pictured. Seeing as web sites can have many pictures, I would have included one of the original pan.

Agree 100%…I bit the bullet several years ago and bought the big and little, expensive, Pullman pans form King Arthur. Turns out it was a great purchase…I couldn’t live without them. Arthur J…I’ve made the milk bread In the big Pullman, no lid…..stunning loaf..you’ll love it!

I’ve been using a Pullman pan for bread the last year. The lid on technique does take some practice using the right amount of dough and letting it rise to the “right” height before sliding on the lid and then baking. Once you “get it” it really is fun to create square bread. I want to make Japanese milk bread in the Pullman Pan next. Pan de Mie agrees with me. King Arthur sells this pan in two sizes (not cheap). I purchase store bought sandwich bread no more. The pan can greatly increase .bread consumption. User beware!
