Our Best Avocado Toast Recipes (Because You Can Never Have Too Many)
There's more to this staple than just salt, pepper, and olive oil.
We’ve teamed up with Apeel to highlight our favorite avocado recipes for every time of day. Apeel-Protected Avocados have an invisible layer of plant-based protection that locks moisture in and keeps oxygen out, which makes for longer-lasting produce and helps to reduce food waste.
Whenever I don't know what to make for breakfast, lunch, or even a snack, my fallback is always avocado toast. I'll usually keep it simple—olive oil, salt, pepper, and maybe a squeeze of lemon or splash of balsamic for bite—but every now and then, I like to break out of my avo toast routine and mix things up a bit. Think: crunchy-crisp garnishes (like shallots, thinly sliced red onion, and nori), herbs (from parsley to mint), cheeses (feta is a fave), proteins (canned tuna or chicken work great), and different types of drizzles and dressings (hello, tahini).
Of course, making avocado toast on the regular requires a continuous supply of avocados. But as any avocado fan knows all too well, most avocados go from juuuust ripe to mushy and brown in a matter of days, so it's often difficult to keep more than a few in the kitchen at one time. Luckily, Apeel-Protected Avocados last longer than other avos, thanks to a plant-based coating that seals in moisture and keeps oxygen out. So you can stock up on as many fresh avocados as you want, and make all the avocado toast your heart desires—starting with a few of our all-time favorite recipes.
1. Our Best Avocado Toast
Our classic avocado toast recipe is all about (surprise) the avocado: a buttery ripe avocado is sliced and set atop a seedy bread slice, then simply dressed in fresh lemon or lime juice, flaky sea salt, red pepper flakes, and good extra-virgin olive oil.
2. Avocado Tartines With Banana & Lime From Apollonia Poilâne
Avocado and...bananas? Trust me on this one. This Genius-approved toast—ahem, tartine—combines the unexpected for a surprisingly perfect bite. And oh, guess what, it doesn't even need salt.
3. Nori & Sesame Avocado Toast
Roasted seaweed snack brings the umami kick you didn't know your avocado toast needed, while sesame oil adds just the right nuttiness. Use any bread you like, but sourdough's signature tang really ties this combo together.
4. Avocado Toast Salad
Avocado toast, but make it salad. The gang's all here—crusty bread, avocado, extra-virgin olive oil—with a few punchy plus-ones in tow (think: chopped herbs, cucumbers, radishes, red onion) for even more flavor and texture. Toss it all in a Greek yogurt-based dressing for a showstopping lunch, appetizer, side dish, you name it.
5. Summer in Denmark Avocado Toast
Dense, dark rye bread and spoonfuls of cottage cheese star alongside mashed avocados in this smørrebrød-inspired twist on your typical avo toast. According to the author, it's especially tasty in the summertime, when tomatoes are extra juicy and ripe.
6. Avocado + Crispy Kale + Tahini + Seasoning Salt Toast
Oven-crisped kale makes a delightfully crunchy counterpart to the smooth richness of avocado. To take things up one more notch, drizzle the whole thing in a generous amount of tahini seasoned with sea salt.
7. Monster Avocado Toast Sandwich
This amped-up avocado toast sandwich brings fresh mozzarella into the mix—and while it's not as zippy feta or goat cheese, its subtlety makes the pesto spread and crunchy-tart sliced tomatillos sing.
8. Tuna Avocado Toast
In true Big Little Recipes fashion, a one-ingredient addition—oil-packed canned tuna—takes plain ol' avocado toast to the next level. Call it tuna salad toast instead, if you like, but this one's a winner either way.
9. Avocado, Feta & Mint on Sourdough Toast
With tangy oomph and herby freshness, feta and mint make a powerhouse combo in this unfussy yet flavorful avocado toast I'd happily eat any time of day.
10. Smoked Trout & Avocado Salad Toasts
If that tuna avocado toast sounds good to you, then be sure to give this smoked trout version a try. With lots of lemon juice, shallots, endives, scallions, and parsley, it's got everything you need for a sublimely satisfying snack.
