9 Weeknight Salmon Recipes

March 19, 2014

It's easy to look to a weeknight dinner as a mindless exercise: to go back to the things that work, over and over, to get bored of them and then still, maybe, keep eating them. Chicken. Pasta. Beans. Repeat. Whether salmon is in that rotation or not, it's time to do something, anything, new -- without giving up convenience or health or the heroic fact that it's a weeknight and there's dinner on the table. Here are our 9 favorite salmon recipes: all weekend dinner party-worthy, and magically weeknight-friendly.

Try salmon with miso and black sesame seeds; the better the salmon and miso, the better the dish, but you can have it on the table in less that 30 minutes: http://alandivack.blogspot.com/2012/05/salmon-with-miso-and-black-sesame-seeds.html

I'm not a big fan of most seafood, but my husband could eat salmon 5 times a day (and has, on occasion, for days on end in those parts of the world where it's on offer). This is the way I prepare it for both of us to enjoy, and it's a staple in our house: http://food52.com/recipes/2426-salmon-papillotes-with-red-peppercorns-lime-and-fresh-ginger

This recipe is one of the best, in any category involving any ingredient, on this site: http://food52.com/recipes/25840-roasted-salmon-with-sunchoke-galettes-and-parsley-vinaigrette I made it last night, without the sunchoke galettes. It was perfectly delicious. I had a bit of the rub left over, which I'm looking forward to using on chicken in the near future. ;o)
