A white gazpacho, a salad with hearts of palm, filet of sole or a fish roulade, celery root puree, creamed fennel and leeks, you could also do a lasagne with a béchamel and white veggies inside, any of the previously mentioned custards sound great another idea would be a coconut cake.
white beans (soup or a side dish), pasta with olive oil/garlic. cole slaw with interior of cabbage, fondue with a white cheese and bread cubes, mushroom lasagne with a béchamel sauce, potatoes au gratin (or califlower), egg white salad finger sandwiches, cucumber in sour cream.
Omg, is the the Dîner en Blanc?! I'm pretty sure one only needs to WEAR white to that, but still....white suits, white food. Anyway, I digress. I feel like I've suggested pavlovas like 3 dozen times in these forums, but I love them so...pavlova's with a buttermilk-vanilla bean ice cream, white chocolate milk crumble, spun sugar, jordan almonds, torn sponge cake....I could go on. If you're not looking for dessert, though.....I have nothing ;)
yessss! Diner in Blanc! in Rome! I'm so excited, and yes, you should only wera white (and linens), but I'm kind of a nerd and want to make it all super white. I'm almost sure it is going to be pavolovas for dessert, maybe peanut butter as someone suggested.

You're getting lots of ideas here. How are you going to select for a total menu? and, BTW, is there a theme or guiding principle beyond "totally white"?
Just musing on menu choices...there both basics (pasta Alfredo with chicken breast) & intriguing outliers suggested here (white curry, sautéed squid). If you have enough cooks, space, budget, offer choices at each course. If not, provide a familiar, recognizable main course (say, chicken) & more unusual dishes (cauliflower panacotta) around it.

white asparagus is in season now! you could roast them, and then use them as an appetizer or in a risotto for a main dish. for desserts: panna cotta is very white, perhaps with a white chocolate or coconut finish instead of the more traditional berry topping.

Oh, this is a fun idea! I once had a cooking instructor (course was intermediate French) who didn't say a word about it, but all her dishes were white-dominant. I only realized in retrospect. Two favorites I remember and made often are: mushroom-scallion soup that could be served hot or cold, and tasted of one of the dominant ingredients at each temperature. I've lost the recipe, but it sounds easy enough to add scallions to a good mushroom soup recipe. And a gorgeous Pavlova, whose whipped cream covered the fruit (sometimes berries, sometimes peaches).
