So from this video, I am making the pasta from it. I was wondering if I can use all purpose flour?

I have used AP flour many times with good results.
Only after i learned how to make pasta did I see recipes calling for 00 flour (very finely ground). Have not yet tried that.
Those who have used the 00 can tell us whether they think it preferable or essential.
It's actually your best choice
