I am one that will not have more than 1 slice of toasted French baguette and cafe-au-lai early in the am.. But then, say elevenish, I'd love a plate of chilaquiles and refried beans, do not forget Hot Black coffee.

I love three basic traditional American breakfasts: eggs over easy, home fries and toast; steel-cut oatmeal slow-cooked with brown sugar and apples, and skillets. I like British breakfasts, but I've only had good ones in the UK. Adding avocado (either as guac or fresh) is always good for egg-based brekkies, and an omelet wrapped in a nice warm tortilla is my husband's fave!

I soak oatmeal overnight with a tblsp of apple cider vinegar and then strain and cook in the morning. It cooks fast after soaking and the apple cider vinegar gives it a nice sour dough flavor. Topped with braised greens and mushrooms and a poached or fried egg and a spoonful of sauerkraut. Yum!
