14 Crisps, Crumbles, Cobblers, and Buckles to Make with Summer Fruit

Here's one way to stump even the most ardent dessert fan: Quiz them on what differentiates a crisp from a crumble, a crumble from a cobbler, a cobbler from a buckle, a buckle from a pandowdy. Intracacies aside, they are all delicious—the crumbs are tender and buttery, the biscuits sugared and browned, the oats caramelized and crispy. The fruit flows molten beneath. They are exuberantly messy—and best with a shower of cream or a scoop of vanilla melting over it. Plus: They feed a crowd, are easy to transport, and please just about everyone. For me it's buckle and cobbler. Especially my recipe for blueberry buckle (no idea where I got it) and blackberry- nectarine cobbler, more or less adapted from Cook's and from Canal House Cooking 4. Absolutely the best!

Not all cobblers have a biscuit crust. In our family we've found we like the cakey crust best. [ You missed this one. ]

That Rhubarb Cherry Hibiscus Crumble certainly caught my eye! Crumbles are my personal favorite - easier to make with that pastry crunch still there.
