A question about a recipe: Strawberry Shrub

I have a question about the ingredient "coconut vinegar (5% acidity)" on the recipe "Strawberry Shrub" from hardlikearmour.
In H Mart, I saw Palm Vinegar, and thought of this recipe. Will it make an appropriate substitute?

The palm vinegar will work, but the end color won't be quite as pretty. I used it to make a watermelon-lychee vinegar and it was a brownish color in the end. With more boldly colored fruit like strawberry I think it will be fine.
