All zucchini are summer squash, but not all summer squash are zucchini. (Read all about the different types here.)
But here's the truth: Pattypan squash don't know they're not zucchini, and neither do Costata Romanesco or Zephyr squash. And if the squash aren't so concerned about their differences, then—so long as they don't bring too many seeds or too much bitterness to the party—neither are we. Nor these recipes!
Use any variety of summer squash (or call them zucchini!) you'd like. Ease yourself in with some sweet cookies and loaves, then move onto the savory heavy-hitters.
Say your neighbor drops off a share of their bumper crop of zucchini. What do you turn it into? Tell us in the comments.
