29 Genius Recipes to Freeze Now (Because It's About to Get Crazy)

October 26, 2016

Below are 29 Genius Recipes that—were I being smart and responsible like you—I would cook and freeze now. The holidays are barrelling down on us almost here (yay!) and a freezer full of ready-to-roll little helpers will make it all go more smoothly—or at least mean less cooking later.

For more tips on freezing and defrosting, go here, but the gist is: Wrap tightly, label religiously, move stuff to the fridge the day-ish before you want to use it. Eat (and entertain) well, feel proud, repeat.

stews & sauces for entertaining (and in between)

Starchy Purées & Polentas (Yes, You Can)

bread (for snacking, crumbs, & stuffing)

flavor boosters to freeze in ice cube trays

slice-and-bake cookies & pie crust for the last minute

Ready-to-defrost sweets

The most freezable of them all

I'm an ex-economist, ex-Californian who moved to New York to work in food media in 2007. Dodgy career choices aside, I can't help but apply the rational tendencies of my former life to things like: recipe tweaking, digging up obscure facts about pizza, and deciding how many pastries to put in my purse for "later."

I have frozen Smitten Kitchens Mushroom Bourguignon and when I defrosted it it was inedible. The mushrooms became extremely rubbery. YMMV but I recommend eating it fresh.

It would be so nice to see a Genius round-up of good fall dinners that can be doubled and made ahead to freeze. In the spirit of respect and helpfulness, I have just added a "recipe" (for peace of mind) expanding on an idea I shared here 3 years ago in an article on advance prep for Thanksgiving. Here is the recipe , which I hope will provide a catalyst for a feature here on recipes to double and freeze for convenient meals in the future. Thank you. ;o)
