Leftovers are an acquired taste. As a child, I hated them—the thought of eating the same thing two nights in a row was unbearable. These days, the less work I have to do and money I have to spend to get food in my mouth, the better. 

Come holiday time, leftovers aren't just practical—they're something to look forward to. Here's how to extend the best meal of the year into a several-day affair:

The turkey carcass and the ham bones are leftovers in a sense. I make split pea soup or a pot of black-eyed peas seasoned with the ham bone and chunks of the ham, and as for the bird, I make a tomato-based turkey frame soup or a cream-based turkey frame chowder with the carcass.
