20 Must-Eat Summer Recipes You Still Have Time to Make

August 29, 2016

We're republishing this list—originally posted in June 2015 as Summer Bucket-List Recipes—as a reminder that there's still time: Summer's not over yet! Go make a pie.

There's something about summertime that makes us so prone to making bucket lists, lists that grip us with the same voracious enthusiasm as New Year's resolutions—but instead of bracing ourselves against the cold, we're expanding. Summer is wonderful in this way.

What's on your summer bucket list? Have you vowed to join a CSA, or plant a vegetable garden, or make everything from scratch? Have you pledged to compost, or to go road-tripping, or to use the grill more often, or just to relax a little? Has summer started so quickly for you that you've not yet gotten around to even thinking about a bucket list? We hear you. Us? We want picnic foods, bright flavors, intense colors, and nothing too heavy—all while taking advantage of the season's best produce. Here are the recipes on our summer bucket list:

I never see them in stores here, but I think it's too late for fresh sour cherries. Off to try the mint ice cream, though I have little faith in the recipe.

Here's another one! Discovered and publicly recognized by Jennifer Steinhauer, this is a real workhorse in my kitchen: In fact, I had some in the freezer, so I cooked whole wheat spaghetti, tossed a pound of frozen/thawed mixed seafood into the cooking water a minute before the pasta was done, drained and tossed with the cold sauce, and served alongside the zucchini, mint, basil and walnut side linked to above in your article. So scrummy, and the whole meal took about 20 minutes to prepare. ;o)

Everyone should have this on their bucket lists:

It's particularly beautiful -- stunning really, and a bit surprising to see as a side -- when made with white peaches, as shown here:
Or, use a combination of yellow and white. This recipe is one of the hidden gems on this site that lives up to its "Genius" billing. ;o)
