When I think of raw desserts, my mind immediately goes to all the spoonfuls of unbaked cookie dough and brownie batter I’ve ingested in my 25 years. I just love licking the spatula (and bowl), though I know every bite flirts with salmonella.

Turns out there are safer sweets I can enjoy raw. No-bake desserts (often called raw) are made from unprocessed nuts, fruit, and natural sweeteners like maple syrup. While they aren’t pegged to any specific diet, many raw recipes overlap with vegan, gluten-free, or paleo lifestyles. Also, because raw desserts don’t undergo intense oven heat, they can be full of healthy enzymes and vitamins.

I wouldn’t go so far to say these treats are healthy—they’re still desserts, after all—but they are delicious. See for yourself with these 19 raw recipes. Oh, and it’s totally fine if you lick the bowl.

Of course, there's always tempering chocolate and adding in some dried fruit and nuts.
With microwave tempering you can make a small batch in a few minutes.
