My perfect morning starts with a cup of coffee, toast, and two soft-boiled eggs. There’s something so wonderful about the contrast of creamy, silky yolks and crispy sourdough (the coffee’s just there to wake me up). And when I finally start dinner after a long day, a last-minute fried egg atop sautéed greens and pasta makes for a speedy, satisfying meal.

Have you ever tasted an egg fried in bacon grease and flipped once for over easy? After plating, one can paper towel a bit of grease off, but it’s the texture and edge crispness that makes it my all time favorite!

that's how my Dad did them. Made an English breakfast fry up then fry bread and eggs in the bacon fat. So good.

Instead of flipping them, my mom taught me to use my spatula/turner to splash the hot grease on the top. Not too much though! Just enough to turn the yolk a bit opaque and to stop the white from jiggling. If you've let the grease stay hot you get a beautiful egg surrounded by crispy brown lace. DEFINITELY my comfort food!

One of my favorite SUPER easy way to fix eggs, an “everyday” or week day preparation from Food 52 is Canal House's Pimentón Fried Eggs. https://food52.com/recipes/55040-canal-house-s-pimenton-fried-eggs. So easy, basically eggs + oil + smoked paprika, and crunchy edged fried eggs! Cant wait to try more of these!!!

Don't have a favorite to offer but a favor to ask. Having searched the Internet and printed literature and having kitchen tested the most promising finds, I'm at a loss for a way forward for the ranchero sauce that is so common in Mexican restaurants throughout the country (most recently, La Mexicana in Houston): a rich savory chocolate colored (but not flavored) confection that verges on the consistency of gravy. Most people order theirs with fried eggs but I prefer mine scrambled.

I also searched high and low for a ranchero sauce recipe. I finally found one by Melissa Sperka. Try this sauce with leftover pot roast to make Shredded Beef Enchiladas, delicious!

I love both creamed spinach with an egg poached on top and Turkish leeks and spinach baked with a chunk of feta and poached egg on top. Both with good crusty bread.

I got some really great ideas from this. Like all things, I adjust to my taste. My favorite egg recipe is scrambled eggs with truffle oil. Add a dash of heavy cream and fresh pepper to 2 or 3 eggs when scrambling. Add tbsp of butter and tsp of bacon fat to hot pan. Cook to your preferred doneness. I salt after cooking and add a dash of white truffle oil. Yum.
