Do I cook this in the marinade or remove? i would assume you remove the meat but since it says to baste im not sure! thanks

i'm cooking short ribs for 8. The recipe I'm following says to use 6 bone-in to get 5 3/4 pounds. We only found smaller ones. Will that be fine?
